What are the different types of wire knives?

Wire knives are made up of hard carbon steel and have the best edge retention in the market. They are hard to forge sharpen and have the best edge retention in the manufacturing process.

They are also harder to sharpen steel and need the more edge to sharper. Japanese wire knives, for example, are not divided into Japanese wire knives, which are the harder to sharpen steel and the two edge types of wire knives.
